Coca cola Cake (from Joy Denk)

 

Cake: 1 c. butter 2 c. sugar

3 tbsp. cocoa (heaping) 2 c. flour

1 c. Coca-Cola 1 tsp. soda

1 tsp. instant coffee pinch of salt

1 ½ c. mini-marshmallows ½ c. buttermilk

2 eggs

1 tsp. vanilla

Melt butter in saucepan. Add cocoa, cola, coffee, and marshmallows. Bring to a boil. (Marsh-mallows should melt.) In a mixing bowl, mix dry ingredients: sugar, flour, soda, & salt. In a separate bowl, mix buttermilk, eggs, & vanilla. Add this to cocoa mix. Add cocoa/egg mix to dry ingredients. Pour into greased and floured pan. Bake 350 degrees: in a jellyroll pan for 15 minutes, or in a 13 x 9 for 20 minutes, check with a toothpick for doneness—may take 30 minutes. Remove cake from oven and frost immediately.

Frosting: ½ c. butter 3 tbsp. cocoa (heaping)

3 tbsp. buttermilk 1 tsp. vanilla

3 tbsp. Coca-Cola 1 box powdered sugar

Bring first four ingredients to a boil. Add vanilla and powdered sugar. Mix well. Pecans or walnuts may be added at this point, if desired. Frost cake in the pan while still hot.
